Poppin’ Cherries

Happy weekend, gorgeous people! This week has to be the fastest week of my life. Wasn’t Monday just yesterday? I don’t even remember what happened that day!

It probably started like today. I woke up at 5:45 a.m. to go for a lovely run. Last night I intended to do laundry, but had a blonde moment and tried to use the wrong key to get in. Therefore, I wore absolutely disgustingly dirty workout wear. Yes bacteria, please run all over my body. It wasn’t so bad, though.

I came back starving, and when I eventually sat down to my soupy breakfast, I wasn’t too pleased:

What I learned: do not add a full cup of liquid to 1/3 C oat bran to soak all night. Unless you like soupy, runny, watery oats. It still had a delicious banana-coconut-pumpkin-pie-spiciness that encouraged me to eat it all. In the bowl: 1/3 C oat bran, 1/3 C almond milk, 2/3 C water (DO NOT DO THAT), 1/2 naner, pumpkin pie spice and almond butter.

Work today was busy as always! For the first half of the day, I researched stories, fact-checked, emailed people, the usual.

And then I popped my cherry. My VegNews chef cherry, that is:

You’d never be able to guess I cooked, right? Last night I was asked to cook, so I thought I should jump right in. Colleen advised me that we didn’t have much left, but we did have a lot of sweet potatoes. Dingdingding! That was a huge sign that it was my turn:

I made a so-SnackFace lunch: cheetahs, salad and a bean salad. The bean salad had chickpeas, black beans, corn, celery (I usually use red bell pepper, though), olive oil, balsamic and assorted herbs and spices (basil, rosemary, oregano, pepper, something else I can’t remember right now). Of course I enjoyed it. Everyone else seemed to like it too, but who knows. They could have just been being polite.

The second half of the day was more of the first half. Except one huge thing…the July+August issue finally arrived at the office! The joy that took over the staff was beautiful! It’s their baby! I had these snacks to power me through the excitement and work:

I ate the apple and only half that Larabar. It wasn’t my favorite. I wanted a really strong chocolate and coconut combined flavor, but it was mostly date-y. Their coconut cream pie flavor is my absolute favorite. I haven’t been able to find it lately for some reason.

I hopped out of the office at 6 p.m. and decided no meal sounded good to me. SnackFace mode:

Then I was craving something watery and tart. So I popped more cherries:

Multiply that gorgeous plate by two, and that’s what I really had. Right now I’m picking out vegan chocolate chips from this trail mix, but that doesn’t make for a good photo.

I need to run to put my laundry in the dryer, but other than that I have no idea what I’ll be doing tonight. I have a copy of Food Inc., and then I know my homie gets back tonight! I know it’s going to be a wild weekend, though. Be ready for it…

QUESTION: What’s your current food obsession?
Hmmm, well, I have such minimal supplies and I don’t want to spend much money. I’d say kabocha, but really, it’s a place, not one food: Trader Joe’s!

  3. I add a cup of liquid to my oat bran overnight, but i cook it in the AM so it gets all fluffy and overflow-y…but if you are getting back from a run, hot oats are kinda barf-inducing 😀 I’m sure everyone loved your lunch it looks bomb dig..have fun this wknd lovah!

      glidingcalm- Oh you’re right! I did say that! At the time I thought they had no oven, but they have some oven-like thing that sits on the countertop. Is that a toaster-oven? I dunno, but that’s what I used. It was great!

    Congrats on doing such a great job with cooking lunch today! It looks fantastic! My food obsession right now is probably my wraps with tofu, lettuce, cucumber and tofutti. I just cannot get enough of them. I have a wrap every day for lunch or dinner and it’s just sooo yum!

  8. I LOVE Trader Joe’s! We have a few near my house in Maryland, but none here in Europe! I literally dream about that place, it will be one of my first errands when I get home!

    Sometimes I actually crave liquidy oats! it would probably be better if it was milk instead of water though. Current obsessions? Peanut butter of course, pumpkin, protein powder, and greek yogurt!

  18. oh you cooked! i was thinking the same thing GC was but i saw what you wrote. thank god for the toaster ov! i liked your lil tutorial page too. i usually cook mine at 375 maybe i will turn up the heat next time and will have maximum spottage! jealous of your TJs love, only because i can’t participate in daily trips there. my roommate was wasted last night and busted out my brand new jar of TJs corn salsa and ate a quarter of the jar on her 3 AM burrito.. i woke up today and saw the damage, is it wrong that i yelled at her? haha i am protective of my beloved TJs goods since i have to bring them back here all the way from cali!

    Congrats on finally cookin’ up your specialties for the vegnews crew!!!!! I LOVE that you made cheetah taters, that’s so exciting….i’m sure they LOVED them, I mean…who doesn’t!?!?! Damn local grocery stores have been out lately!!! I don’t want a garnet yam (they’re yellow…not as tasty!), I want a SWEET P!!…Ok end of rant.

    Anywaysss, I hope you and brookie are having a great time, get crazy for me tonight! That plate of cherries is def a gorgeous one, and I feel ya on that larabar flavor….i tried it right when larabars became BIG, and I hated it. Icky!
