Chu-Chu-Chu-Cheetahs!
There is one food I love, always return to and revere as comfort food at its finest. It also acts as lovely transportation for ketchup to hop on. They’re orange, they’re spotted, they’re cheetah taters:

Your spots are showing!
To start, I try to find a sweet potato that’s the size of my foot:

Size 10? Just right.
Then I clean it, I swear.
The procedure:
-Pre-heat oven to 450*
-Line baking sheet with aluminum foil; spray with non-stick spray
-Cut sweet potato into desired shaped. I enjoy the half-moons best.
-Place evenly on baking sheet; lightly spray tops with non-stick and sprinkle with desired spices. I usually don’t add spice, but garam masala or cinnamon work brilliantly.
-Bake for 15 minutes. Flip. Bake for 15 minutes more, or until spots develop.
***Also, when the air starts to smell sweet and caramelly, you’re getting close!
-Take out of oven, plate, serve with 1/2- 1 C ketchup. Kidding. Kinda.

And if you should ever tire of just plain cheetahs (which you won’t), turn to this incredible Cinnamon Maple Sweet Potato Cream Cheese Toast:

Tastes even better than it looks!
On toasted bread:
-Tofutti Better Than Cream Cheese
-Layer of cheetahs
-Sprinkle of cinnamon
-Drizzle of maple syrup
But of course, old faithful never disappoints. Now go make spots!

One of my fav comfort foods, especially in the winter is ‘healthy’ chilli cheese fries. I’d take these delicious looking cheetahs, top them with some low-fat, high fibre chilli and as a non-vegan vegetarian sprinkle with a little bit of mozzarella. And finally enjoy!
What about this, with peanut butter, marshamallow fluff, and then topped with cheetahs? I’ll try it!

So I bought a couple sweet potatoes today, to have on hand to make these, but all the ones they had were so oddly shaped. I think it’s going to be hard to cut them up in a pretty way. Oh well, at least they’ll taste great!
